Simple Treat To Sweeten Your Holiday Meal

(VIDEO) Hospitality Services Executive Chef Dewey McMurrey shares his recipe for No-Bake Blueberry Cheesecake.


  • 1 lb cream cheese (cubed)
  • 1/2 cup confectioners' sugar
  • 1 pint blueberries (frozen)
  • 2 graham crackers (whole) or 4 Oreo cookies
  • 2 Creme Brûlée bowls


  • Cut the cream cheese into large cubes and let them soften at room temperature.
  • (OPTIONAL) On the stove, combine the blueberries with the sugar until very smooth.
  • When the cream cheese is soft, place in a mixing bowl.
  • Mix the sugar, blueberries and cream cheese until smooth and evenly incorporated.
  • Crush graham crackers (or cookies) and place them in the bottom of the Creme Brûlée bowls.
  • Pour cake mixture into the bowls then chill* in the refrigerator or serve right away.

    *The texture and viscosity of the cheesecake is more traditional after chilling.
