State of an Industry: Salmonella and Bovine Lymph Nodes

Food Safety Magazine - Salmonella has been a hot topic for the past few years. In December 2013, the U.S. Department of Agriculture Food Safety and Inspection Service (USDA-FSIS) released the Salmonella action plan, which included 10 action items for the agency.

Based on studies published by Sara Gragg and others from Texas Tech University and USDA's Agricultural Research Service (ARS),[1,2] the beef industry is currently operating under three basic principles with regard to Salmonella prevalence in lymph nodes.
