The USDA announced late Friday the recall of more than 23,000 pounds of beef trimmings from the Caviness Beef Packers plant in Hereford due to contamination from E. coli bacteria. The beef trimmings were shipped to fast food restaurants and stores in Texas. The contamination was discovered during a food safety assessment.
Guy Loneragan, a veterinary epidemiologist and professor of food safety and health at Texas Tech University, has done extensive research in the area of antimicrobial resistant bacteria. His research has received funding from the USDA’s National Institutes of Food and Agriculture and through cooperative agreements and grants from the USDA’s Agricultural Research Service.
